pork adobo: a recipe

i made some pork adobo using this recipe, with slight modifications:


Pork Adobo Recipe

Ingredients
  • 2 lbs pork belly (i used ribs!)
  • 2 tbsp garlic, minced or crushed
  • 5 pieces dried bay leaves
  • 4 tbsp vinegar
  • 1 cup soy sauce
  • 1 tbsp whole pepper corn
  • 1 cup water
  • salt to taste

Cooking Procedure
  1. Combine the pork pieces, soy sauce, and garlic then marinade for at least 1 hour
  1. Heat the pot and put-in the marinated pork belly then cook for a few minutes
  1. Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour
  1. Put-in the vinegar and simmer for 12 to 15 minutes
  1. Add salt to taste
  1. Serve hot. 
 The modifications I made are:
1. I marinated the meat in coconut milk and added a little white pepper. I really needed to use up this half-empty can of coconut milk.
2. I seasoned the pot with some spices-- red chilli powder, sugar, some white and black pepper. What to do, my South Asian tongue needs some heat!
3. I used chicken stock instead of water!

 Generally I love to cook. But, planning a meal this summer has been a nightmare, especially since I am on severe budget. Before all my plans for summer fell through, I had bought enough meat to last me for a while. And that's what I am eating these days. Which also means, I have a miniscule budget for condiments. But, this dish did not require me to buy anything extra. And it's flexible enough. The result was good enough. This recipe is a keeper!
